Ingredients

  • 500g (about 1 lb) white fish fillets (like cod, haddock, or pollock), cut into chunks
  • 200g (7 oz) smoked haddock fillets, cut into chunks
  • 150g (5 oz) cooked prawns (shrimp), peeled and deveined
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 50g (1/4 cup) unsalted butter
  • 50g (1/3 cup) all-purpose flour
  • 400ml (1 3/4 cups) whole milk
  • 100ml (1/2 cup) heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh dill, chopped (optional)
  • Salt and pepper to taste
  • 1/2 cup grated cheddar cheese (optional, for extra richness)

For the Topping:1 kg (2.2 lbs) potatoes, peeled and chopped50g (1/4 cup) unsalted butter100ml (1/2 cup) milkSalt and pepper to tasteA handful of grated cheddar cheese (optional)

Instructions

  • Preheat the Oven: Preheat your oven to 200°C (390°F) and grease a large baking dish.
  • Prepare the Mashed Potatoes: Start by boiling the potatoes in a large pot of salted water until they’re soft and tender, about 15 minutes. Drain well, then mash them with butter and milk until smooth. Season with salt and pepper. Set aside.
  • Make the Creamy Sauce: In a large pan, melt the butter over medium heat. Add the chopped onion and garlic, sautéing until soft and fragrant, about 5 minutes. Stir in the flour and cook for another 2 minutes to get rid of the raw flour taste.
  • Add the Liquids: Gradually whisk in the milk and cream, stirring constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.
  • Flavor the Sauce: Stir in the Dijon mustard, fresh parsley, dill (if using), and season with salt and pepper. If you’re feeling indulgent, add a bit of grated cheddar to the sauce for extra creaminess.
  • Combine the Fish and Sauce: Gently fold in the fish chunks and prawns, making sure they’re evenly coated with the creamy sauce. Pour this mixture into your prepared baking dish.
  • Top with Mashed Potatoes: Spoon the mashed potatoes over the fish filling, spreading it out evenly. Use a fork to create some texture on top (this will help it brown beautifully). Sprinkle a bit of grated cheddar on top if you like a cheesy crust.
  • Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the filling is bubbling up at the edges.
  • Serve and Enjoy: Let the pie cool slightly before serving. It’s perfect with a simple green salad or some steamed veggies on the side.

Notes

  • Fish Variety: Feel free to use your favorite combination of fish. Smoked haddock adds a wonderful depth of flavor, but you can mix and match as you like.
  • Leftovers: This pie keeps well in the fridge for up to 2 days. Reheat in the oven until piping hot before serving.
  • Add-ins: Feel free to get creative with add-ins like spinach or hard-boiled eggs for extra texture and flavor.
